Go Dawgs - Oh and Pass the Cheese

It's no secret around here that I love me some cheese. I mean seriously LOVE the cheese. But you know what else I love? My Georgia Bulldogs. For realz y'all. Those crisp cool days tailgating and then walking to Sanford Stadium to watch the action between the hedges. The excitement, the energy is palpable . . . But since I am clearly now past my glory days of college, there's just no way I could stand up for 3 hours to watch them play. Mama needs her a chair.

Unfortunately, tickets that include sitting are just a WEE bit out of our ministry-funded price range. So that means we will be watching from the comfort of our own home, or a friend's home.

Although this may SEEM disappointing, in actuality I consider it a good thing because it means the eating does not have to stop when the game starts. Did you hear that people? Because I think it bears repeating: The eating does not have to stop when the game starts. Hallelujah and praise the Lord.

Since I am nothing if not an emotional eater, the closer the game=the more I consume. And I think you all know by now that cheese, chips, and salsa are basically my ideal companions (when combined with an ice-cold diet coke of course).

Something else you know about me is this: I cannot cook. For realz, I have NO cooking skills to speak of. That's why this dip? It is perfect for me. We were destined for each other.

Because I love you, here is my ultra-easy-tasty-cheesy: Cheesy-Corn Dip.

2 cans Mexi-Corn
2 cups Monterrey Jack shredded cheese
1 cup Parmesan cheese
Enough Mayo to hold it all together while you mix (and to add that special healthy kick. . .)

Bake at 350 for 20-30 minutes until the cheese is bubbly.

I usually like to use multi-grain chips (have you tried those? they're delicious). Because, well, clearly I am all about the healthy.

  14. I can't believe I was on the road for diptacular weekend. I found out about it when I got to Whimzie's house and found EIGHT pounds of cream cheese in her fridge.
